- It's 4 of large courgettes, grated and sprinkled with some salt to draw out the water.

Courgette Fritters (Kolokithokeftedes) instructions
- Grate and salt the courgettes. Place in a colander for about 10 minutes to draw the water out. Squeeze well between your hands and place in a bowl.
- Add all the other ingredients to the courgettes, mix well and form into patties.
- Heat some sunflower oil and add the patties. Cook until golden brown (should take a few minutes on each side).
- Place on a plate covered with kitchen paper to drain any excess oil..
